Playful snack bars blend chewy gummies, freeze-dried candy, and an oat base for colorful, tasty treats.
# What You'll Need:
→ Snack Bar Base
01 - 2 cups rolled oats
02 - 1/2 cup almond butter or peanut butter
03 - 1/3 cup honey or maple syrup
04 - 1/4 cup unsalted butter, melted
05 - 1/2 teaspoon vanilla extract
06 - Pinch of salt
→ Homemade Gummies
07 - 1 cup 100% fruit juice, such as apple, berry, or orange
08 - 2 tablespoons unflavored gelatin
09 - 2 to 3 tablespoons honey or agave syrup
→ Mash-Up Toppings
10 - 1 cup freeze-dried fruit, lightly crushed (such as strawberries or raspberries)
11 - 1 cup freeze-dried candy, such as Skittles or marshmallows, crushed or chopped
# Directions:
01 - Line an 8x8-inch baking pan with parchment paper to prevent sticking.
02 - In a large mixing bowl, thoroughly combine rolled oats, almond butter, honey, melted butter, vanilla extract, and a pinch of salt. Press this mixture firmly and evenly into the prepared pan. Transfer to the refrigerator while preparing gummies.
03 - Pour fruit juice into a small saucepan. Evenly sprinkle gelatin over the surface and let it stand for 5 minutes to bloom. Warm gently over low heat, stirring constantly until gelatin fully dissolves. Mix in honey, stir well, then pour the mixture into a parchment-lined small baking dish. Refrigerate for 45 to 60 minutes until set.
04 - Once the gummies are fully set, remove them from the dish and cut into small cubes.
05 - Take the oat base from the refrigerator. Evenly distribute homemade gummy cubes, crushed freeze-dried fruit, and crushed freeze-dried candy across the surface. Gently press toppings into the oat base.
06 - Chill the assembled pan in the refrigerator for another 10 to 15 minutes to allow the toppings to set.
07 - Lift the entire slab from the pan using the parchment paper. With a sharp knife, cut into 12 even bars.
