# Directions:

01 - Place the mini pumpkin or gourd at the bottom center of a large wooden board to represent the turkey's body.
02 - Fan sliced prosciutto, salami, and smoked turkey breast above the pumpkin, alternating colors and textures to mimic tail feathers.
03 - Position assorted cheeses in arcs radiating from the turkey body to resemble rows of a wheat field.
04 - Arrange whole wheat and multigrain crackers along with baguette slices in lines or curves to evoke wheat stalks.
05 - Cluster grapes, apple and pear slices, dried apricots, and cranberries artfully around cheeses and meats.
06 - Fill remaining spaces with roasted almonds, pistachios, pumpkin seeds, and fresh rosemary sprigs.
07 - Insert pretzel sticks among cheese, fruit, and at edges to create additional wheat stalk visuals.
08 - Attach black olives for eyes, a red bell pepper piece for the wattle, and a yellow cheese triangle for the beak to the front of the pumpkin using toothpicks if necessary.
09 - Serve immediately or cover with plastic wrap and refrigerate until ready to serve.
